We recommend using kiln-dried hardwood — silver birch or oak are ideal — to reach and maintain peak heat efficiently.

It depends on the size you choose. The 60×60 cm model cooks 1–2 × 12" pizzas at once, the 80×60 cm cooks 2–3 × 12" pizzas, and the 100×80 cm can cook up to 4 × 12" pizzas simultaneously — ideal for larger gatherings and outdoor entertaining.

The Clementi Pulcinella is a wood-fired oven. We recommend kiln-dried hardwood logs — silver birch or oak are the preferred choices — for the cleanest burn and highest heat output. Avoid softwoods, treated or painted timber, and any wood with a moisture content above 20%, as these produce excess smoke and can affect flavour.
